Looking for One year/ 18 month professional Chefs training Italy/ Spain

Hello everyone

 

This would be my second career and depending on how my money will stretch I want to do a one or 18 month Chefs training. I am looking for a professional chefs training in Italy or Spain specializing in Mediterranean or Italian food. I have looked around and got a recommendation for Bell-art in Barcelona which looks very promising. Can anyone recommend a established, internationally accredited Culinary school in Italy or Spain that you have been to as a student, currently studying? Any recommendation from Chefs, long in the field, would be wonderful too.

I hope some of the very helpful Chefs in the introduction topic will find me here and maybe add on to this as well. Ever since I have been 14 I have always sought out kitchen jobs. As second jobs I have never been a waitress once. I started working in weekends in a hotel kitchen where I was a kitchen help. It was wonderful and due to showing the enthusiasm that young I got to help with all sorts of things Ice cream making, Salads, preparing breakfast, and a little line cooking. Later on I worked during summers in a large facility kitchen in a retirement home making pudding for 150 people, working on the serving line where all the individual meals were put together for every kind of diet. This is quite some time ago. Things may be different now but I get the high pace and demands of the business. In Toronto I happen to move in next to a retired Italian Chef (Karma?). She still caters and makes all the pastries for the community there. She taught me how to make a variety of pastas and I am one of the only people she shared her Pastriera recipe with (Very proud).
