Culinary Term - Synonym for Discard

I'm searching for the term used to describe the inedible part of food which is discarded at the table. Examples are olive pits, mussel shells, edamame pods, etc.  Often it is something that you spit out and put back on the plate, like a pit, and often times a restaurant will give you a separate plate for them, like for artichoke leaves.  The word "discard" actually has a noun form, which is very close to what I'm looking for, but not quite. The word I'm looking for is an exclusively culinary term.  Can anyone help me out here? It's driving me crazy.

That doesn't sound like a good tableside name but I can picture my servers saying it ha.

" heres a dish for your SCRAP" haha.

Pit, shell w.e. Bowl could be said. Or pick a different language.

The link you provided suggested one word which came quite close, la oubliette, since what I'm looking for is probably a french term, but my word also means the stuff you put on an oubliette.

 

I'm still looking, but I think the word is detritus.

The word you are most likely seeking is the noun ort, which means scrap of food left over from a meal.
