Best Equipment to Cook Sweet Potatoes for Cutting into Fries

For those who do in-house sweet potato fries, what commercial equipment do you use to cut the sweet potatoes?

Since they are too hard for regular potato cutters, you need to pre-cook it a little bit before going through a potato cutter, what commercial kitchen equipment do you use to steam or boil them?

Our kitchen wants to do this in bulk - would you recommend an oven, steamer, or kettle, or any other method?

I know a guy with a seasonal roadside stand in the country that uses a cutter mounted over the fryer on raw sweet potatoes.  I don't know if it dulls faster because of this or what though.  There's got to be a commercial one that will do them and endure, especially if you use smaller (softer) sweet potatoes.  But he buys smalls ones and does them to order, he doesn't precut and store them. 

If they're pre or partially cooked, how would you store them after cutting without breaking them?
