I'm having troubles cooking pancakes on my griddle.
It's a small electric commercial griddle, apparently all stainless steel, however the plate isn't a smooth stainless steel like I'm used to seeing - there are tiny grooves within the metal plate. Is this normal?
Also, cooking pancakes on this is a real pain. It sticks to the surface like nothing else. I've tried seasoning the griddle, and even used some salt with the oil (like I read somewhere), though this left blackened gunk on the surface which I now can't remove - not without some steel wool anyways which I've yet to try. Pancakes still stick like superglue though
Even on low to medium heat, the pancakes seem to cook and burn WAY to fast - like in about 1 minute and their burnt. Is this a result of the pancakes sticking or the thermostat being broken?
How do you cook pancakes on a flat top? Do you have any pointers for a complete novice? I bought this griddle for fundraisers (cooking for a few hundred people) and also for a business I'm about to launch. I've got another one on order that's about to ship in a week. I guess you could say I need help. :)
