I once spent over a month in Sweden and Denmark many years ago and adored the wonderful, fresh seafood. I know that's still part of the cuisine, but also that fresh, healthy dishes are now quite prevalent in the region. In my area of the U.S. (Wisconsin) we have many people whose family heritage is Norwegian, Danish, Swedish and Finnish, so people often prepare traditional dishes especially at holiday times. We hear about lutefisk and aebelskiver, but people here don't know much else about Scandinavian food. I hope you can provide some insights.
