In-Flight Catering

I own a small, family-owned catering business and we have been in business for 4 1/2 years. We have had a request for in-flight catering for a private aviation company. We have catered in many unusual environments but this is unique and I'm pretty clueless on what in-flight catering looks like behind the scenes. I don't want to give a reply to this potential client with "I have not idea how to do this but, yea, we can do it."  Has anyone here done this? I haven't read up on this, yet, as we just received the request and I knew I would get advice and information from you fine, experienced folk here. Thank you in advance for any enlightenment you have to offer!

I cater sometimes for a small airport. Basically they fax us ( yes sone people use faxes still apparently) what the my want we make it and deliver it. Its just food to go, usually some salad and sandwiches.

Maybe what they're looking for is an in flight Chef and service, who knows but them, ask them.
