I am commenting here because I am not 'allowed' to post in the Pro Chef forum.
I was in Vienna a little over a year ago. I enjoyed it very much. I consider Vienna "Hapsburgland" - like Disneyland, only the real thing. It really felt like an amusement park at times with all the tourists. I only added to the congestion. I was there right before Christmas so there were food markets etc filled with people amidst the museums and hordes of people all over the old city center.
Cafe Central seemed nice - very viennese - but it was inundated with tourists. Like me. The only place I saw locals with tourists was at Trzesniewski, right down the street from Cafe Central, I believe. Loved the lady behind the counter serving up sandwiches. Grey hair with a really dark streak and funky glasses. I recommend this place to anybody who visits Vienna.
Although I must say, both Prague and Vienna have some serious issues with vegetables. I had to go on a vegetarian diet for a couple of weeks to flush out all the animal protein. Prague more so than Vienna for everyday food. Not so much with the higher end restaurants, though.
Anyway, didn't really have much to offer in regard to your new endeavor.
@ Jake - I can only imagine it must have been swamped with throngs of people at Christmastime. It is one of the top cities for the Christkindlmarkets. I don't think vegetables are the forte of German, Austrian or Czech food. Meats and sausages are for sure! Like you said the higher end restaurants execute the well. Perhaps you would have enjoyed the vegetables at Meirei im Stadpark. They had wonderful salads and white asparagus soup. https://www.steirereck.at/en/meierei/
