Honey Brined Pork Rib Chops with what accompaniments?

Hey folks. Want to do honey brined pork with crisp polenta. Other components for spring I am thinking apricots, bacon, morel mushrooms, or other suggestions welcome but having a brain block trying to put it together. I thought apricot chutney and use the stock from re hydrating morels to make a mushroom bacon gravy. Can't decide if that sounds like too much going on at once. But again any thoughts or suggestions or combination ideas would be great. Seasonal Veg would also be there.

For me that sounds like quite a heavy Spring entree. Chutney and gravy is a bit overkill. If you really want to go pork for Spring what about some simple baby spring veg. cooked glace au blanc for the vegetable component? Breakfast radishes, turnips, thumbellina carrots etc. depending on what your local farms look like or what your produce vendor has. I would personally avoid a bacon-mushroom gravy if it were me. Just my 2 cents.

Sounds a little bit heavy and busy. How about a honey brined pork with apricot chutney, sprinkled with candied bacon, and served with a honey drambuie sauce. then use the morels in an accompaniment salad of morels and fiddlehead ferns with a Banyuls vinaigrette and also serve your crispy polenta.

Yea sounds heavy to me too totally agree. Thanks for the thoughts!!!! Maybe Do a honey beer glaze with local honey wheat brew. Then there is a bit of glaze in the pan to use as a sauce. Maybe keep the apricots fresh in a salsa. Will need to keep the veg just a sauteed mix of whatever is fresh and good at the time for logistic purpouses on the line. What about a stuffed morel just as a garnish or something?

Actually i love the candied bacon after sitting with it. Bacon jam. Yum with apricots

Stuff the morels with bacon and walnuts and serve as a garnish for the crispy polenta. It would also tie in well with a honey wheat beer glaze that you were thinking about.
