I am currently delivering pita and gyros- in separate containers. What is the best way to hold them after being cooked? Right now I throw them in a full size deep tin and place them in the oven or a cambro hot box. However I want to invest in a holding cabinet because I want to be able to throw them in there an hour prior to delivery (while keeping the meat nice and moist). Is it worth investing in a holding cabinet?
