Guinea Hog: from pen to table

Greetings,

 

I'm looking for a good resource book for butchering, curing and smoking pork.  Unfortunately all the folks I would have turned to for information and help are now deceased.

Thanks MaryB, that looks like a great book.  Do you know if it has information on how to clean the intestines?

My copy is an older version and I don't remember... but it is just done by flushing with water.
