duck bones!

so i made duck confit tamales and now i have these duck leg bones that i don't know what to use for and i feel like i should be using them for something.  is duck stock worth the time?

Depends on what you want to do with the stock?

Definitely worth making stock even if you freeze it for later use.

Brown duck stock.

Roast the bones a second time and make a jus, Use it for a special or a dish currently on menu, or freeze and utilize to enrich a gravy or sauce? x

 

Cool it first, and then skim the fat.

They make a great stock with lots of flavor. I don't roast the bones, just water and mire poix.
