Hello everyone, I was one chef has retired. today I want to introduce people to a series of processing instructions for simple foods from Japan. I'm so sorry because my english is very bad. But I think the video that I made quite simple and easy to understand

Nice.  I use scissors to cut the fins, then pull the skin off with pliers.

Your English, i am very sure is better then my Japanese ...so dont you even worry about it. Welcome to the site... im new too :)

Works the same way with Dover Sole

A lot of work and you end up with the same size fillets I would lol.
Beautiful skills tho.
Not one nick in the flesh on the top side.
