Ugh freakin GMOs!!!  Now if only we could have easy access to these heirloom strains but in my experience heirloom anything is only for those who have easy cash to spend.  Most working people do not.

I spent last year cooking on high end charter yachts in the Bahamas cooking for rich people and 2/3 of our guests has an allergy to this and that.  Every charter had a list of dietary restrictions and every diet imaginable.  Some how gluten seems to target only rich people that have their doctor on speed dial.  I spent the last 8 months cooking in a restaurant on an island in the south pacific and would you believe not one glutard or severely allergic to dust, pollen, lactose and every other thing under the sun.  Bottom line, gluten allergies are a made up stupid American disease for rich white people.  For the one percent that do legitimately have celic that sucks and I feel sorry for you.  For all the rest of the glutards let me know when this fad ends so I can cook you ridiculous shit so you can feel better about yourself!

If you have any food allergies please stay home. Dont be that pain in the ass that goes to a breakfast restaurant on a busy sunday morning with a dairu allergy. Were to busy to go out of our way and gjve you special treatment

i truly am inspired by the people who make the lifestyle choice to eat gluten free.

that takes a lot of discipline.

though i do not enjoy products that are gluten free.

I'm not. I don't respect that choice, as the "onus" is on someone else to cook/bake gluten free. I'd respect them if they could actually bake or cook gluten free though....

Better yet, let's put them all in jail instead.  Because they really shouldn't be allowed to go anywhere and be a pain in the a$$ to anyone at all.  How rude of them to be allergic to stuff anyway, they're such narcissists.  People who are different than us in any way should really not be allowed to even exist.  I mean really.

There is nothing wrong with eating low carb and it can help some people lose weight.  Anyone I know doing so just simple does not order breaded or starchy items and keeps it to themselves. People who pretend to need gluten free because it is the latest fad and harass restaurant staff are the issue.  People with real intolerances and allergies would research first and be consistent.  So many times you see people annoy the FOH and BOH for supposed dietary needs and then nibble on the bread, desert etc of others.  If it is just a diet, use common sense with ordering.

Sometimes I ask for things a certain way because of taste preferences. Recently I ordered a starter salad and asked that they hold the cheese. I also ordered a baked potato with everything on it and try waitress was kind enough to clarify that it included cheese. She thought that I might have had a sensitivity to cheese and that was kind of her. In reality I like cheese on my baked potato but not in my salad.

Kinda like separating restaurants from soup kitchens. Except though that when I cook in a shelter I like to make as many varied food types (vegetarian, vegan, gluten-free et al) as I can. But hey ... that's just me I guess.

personally having celiac disease, allergies to sulfites(buh bye wine), allergies to all seafood,  it sucks to be me. can't work anymore, especially in kitchens where flour is all around. when I go out to eat there are a few restaurants I trust to not cross contaminate and I go at non busy times for my own safety. I am a PIA and I know it. choosing gluten free as a lifestyle rather then a health issue? you have to be a little nuts, as it's in so much stuff!  the only good thing about it being a fad, is that products have gotten much better in the last 10 years and I have way more choices! I can usually find something at most restaurants, I wouldn't go to a regular bakery looking for gluten free as I'd drool too much in front of the cases!

Thank you for adding that perspective.  There is something good out of this for individuals that are actually gluten intolerant. I did not think about that.

Life is all about choices and in your condition, more good choices is just plain good.
