The larger and older the fish the higher the mercury present in the flesh (as a rule).

Can you post a picture of your sleeve fish ?

I may know it by a different name and could maybe help you a bit better.

OBTW welcome to Chef Talk.

As much as I hold professional chefs in high esteem (some of my best friends are professional chefs), their expertise and knowledge is more in the cooking end of things than the nutrition and health end of things.

That having been said, health concerns about a particular food encompasses a fairly big area. Is the concern about mercury, or cholesterol, or microbes, or...?

Also methods of preparation can greatly effect the outcome of some health concerns. While most of the vitamin and mineral content is similar between raw, steamed and fried squid, the calorie and fat content of fried squid are much higher.

My personal plan for diet, nutrition, and health centers around balance, enjoyment, and avoiding excess of anything including surfing the internet for answers (of which there are a myriad to be found).

Squid? That is what a couple of online dictionaries came up with. I know of nothing in it that is dangerous...

It is not that too much squid will hurt you, But too much fried might be to much fat too often ?
