Looking for a pasta sauce

Hey !

I would like to make a meal for my boyfriend. He loves pasta but we often eat it. So I'm looking for an original pasta sauce. I would like something creative, unlike carbonara or bolognese.

On one hand, I would like a sophisticated sauce for events like Saint Valentine, his birthday, and other big events... I like cooking so it can take time. On the other hand, I would like a meal for everyday life. As we are students, it would be cool if it's an easy recipe and a cheap one. Do you have any suggestions ? What are you favourite pasta sauce ?

Not sure if you're looking for something with meat.  This one's meatless but tasty if you're an artichoke fan.  It's best made ahead and reheated.  I like it with cheese or meat tortellini or ravioli.    

 

2 jars (6 oz. each) marinated artichoke hearts in oil
2-3 T. olive oil
1 medium onion, chopped
2 T. minced garlic
1/2 tsp. dried oregano
1/2 tsp. dried basil
1 tsp. coarsely ground black pepper 
1/2 tsp. salt
Pinch of dried red pepper flakes (or to taste)
1 can (28 oz.) plum tomatoes, chopped and with their juice
1/4 cup freshly grated Parmesan cheese
1/4 cup chopped Italian parsley

Drain artichoke hearts, reserving the marinade.


Heat olive oil in large saucepan. Add onions, garlic, oregano, basil, black pepper, salt, red pepper flakes and reserved artichoke marinade. Saute over medium-low heat until onions and garlic are soft and translucent, about 10 minutes.  Add tomatoes and simmer for 30 minutes.  Add artichoke hearts, Parmesan, and parsley. Stir gently, and simmer another 5 minutes.  Taste for seasoning.

I love this (if need some specification just ask!)

 

-with shirmps, julienne zucchini and carrots, blended with lemon juice

-with courgettes, smoked cheese and saffron

-with clams and diced tomato, little bit spicy

-with artichokes and bacon

-with speck and walnuts sauteed with onion and arugula added cool in the end

-pesto genovese: put in the mixer pine nut, garlic, a good olive oil, pecorino and parmigiano reggiano grated, basil. mix and taste for correcting.

almonds are cheaper than pine nuts and tastes good as well!

-with a lot of sweet onion stir fried in a pan with oil and tuna filet (at will with ginger or lemon zest or hot pepper)

Hello, a traditional pasta souce in Italy is "Pesto". Is very simply to prepare and very good...

50 gr. basil leaves
1 tablespoon pine nuts
6 tablespoons of grated Parmesan cheese
2 tablespoons of pecorino (sheep cheese)
½ cup extra virgin olive oil
2 cloves of garlic
a few grains of sea salt

Combine basil, garlic, Parmesan cheese, olive oil and pine nuts in the bowl of a blender and blend to create a smooth sauce. Pesto dressing is no cold should not be heated, if determined to be too dense to be mixed with a little of the pasta cooking water until creamy.
add at the pasta immediately after draining, it'll look great with your boyfriend. hello
