If you could create your own tasting menu... what would it look like?

A for fun, hypothetical situation.

 

You have the opportunity to be the star (or an even bigger one) one night for a special tasting dinner based on your experiences, preferences, etc etc.

 

No limit on anything, including # of courses.

 

What would your dream tasting menu look like, and why? Do the dishes originate from your life experience e.g. childhood and growing up? Or are they what you like to eat? Or is it one cuisine that you excel at? A tasting around the world?

 

I'm still working on mine, but I'll post it when I figure it out

I'll play...

 

First Course: Caribbean Spiny Lobster, an Anegadan lobster tail brushed with a rum, vanilla bean, and black pepper vinaigrette, then grilled over fruitwood and served with a champagne gelee, diced kiwi, and drizzled with a cardamom syrup

 

Second Course: Patagonian Toothfish, a filet brushed with an Asian black bean marinade, then pan seared, finished in a hot oven on a bed of seared bok choy and napa cabbage, served with a Thai red curry sauce

 

Third Course: Smoky Chorizo, Bean, and Banana Soup, a spicy puree of chorizo, red beans, black beans, and bananas and garnished with a mango, banana, and toasted coconut salsa

 

Fourth Course: Intermezzo, a palate cleansing sorbet of key lime, kaffir lime leaves, and Siam queen basil

 

Fifth Course: Grilled Duck Salad, grilled pekin duck breast served on a bed of baby greens tossed with a roasted golden beet vinaigrette and topped with orange molasses marinated grilled red onions, glazed walnuts, and apples

 

Sixth Course: Licorice Lamb, New Zealand lamb rack, pan seared, finished in a hot oven, cut into double chops and served with a licorice merlot sauce

 

Seventh Course: Gelato Modena, balsamic vinegar ice cream with fresh strawberries and cracked black pepper

Sounds delicious sounds like your an excellent creative chef. In my opinion in this economy people just want pub food give me a burger and some fries with an ice cold beer from a frosty mug
