Making a recipe with roasted tomatoes

So last night I chopped up a tomato and threw it on my griddle with salt butter and pepper and just roasted it for a while... It tasted amazing... but I don't know what else to add if I wanted to make it into a dish

what kind of meat would go well with it?
what other vegetables?
what to give it a whamm?

You can make a good salsa with roasted tomatoes.  I've used roasted plum tomatoes in a "Caprese" salad with some fresh mozzarella and basil leaves.  It's a nice alternative when those good summer tomatoes aren't available.

I agree with Lagom on the roasted tomato basil soup.  I've made it...pretty sure it was from Ina Garten.  Roasting tomatoes just brings out the flavor and sweetness.
