Green Sauce

We want to come up with a unique green sauce for Thai/Vietnamese food truck.


There will definitely be jalapenos in it.


It has to be ingredients that will keep well out where the customers use it. So no mayo or other perishables.


How about some fruit, like kiwi or lychee. Maybe a little fish sauce.


Something that will appeal to many palettes.


Maybe something with strong traditional Asian influence fused with whats new.


Any help would be appreciated.

you could make some sort of jelly out of green thai chilis, and adjust other ingredients , like jalapeno or coriander leaf, into it as you like..


equal cups vinegar and sugar, heat it up, little bit of garlic and salt, chili peppers mmm :)
