Looking for a recipe using bacon fat

Hello, I am looking for a recipe for a dressing but using bacon fat. I'd like to do something similar to an oil & vinegar dressing.

We recently used guanciale fat, which is pretty similar to bacon minus the smoke. We chilled it slightly, and whipped it in a kitchen aid to stiff peaks, and served it with roasted radishes and sea salt. A simple riff on a traditional italian radish and butter

Hot Bacon dressing as for spinach salad.

 

Cooked bacon is drained of fat.

Saute sweet onion and bell pepper in bacon drippings, add vinegar, water, sugar, salt. Bring to a simmer and thicken slightly with cornstarch slurry. Add chopped bacon and you are ready to go. Hard boiled egg slices, mushrooms sliced and red onion rings complete the salad. Maybe a ripe tomato wedge as well.

Warm bacon salad dressing for spinach salad..  German Potato Salad. a base for clam chowder and pea soups as well as bean soup.

Heat bacon fat, add smashed garlic(or chop it if you want the garlic pieces left in) and slow simmer until just browned. Add cider vinegar to taste and serve over greens(doesn't have to be spinach, good on small kale leaves, on small beet or turnip leaves). Optional ingredients could be anything goes form the spice or herb department! Scallions are good, as are regular onions chopped...

All great recipes. I'm definitely going to have to experiment with all of these. I am currently in the process of incorporating this dressing into a "sorry, not so sorry salad" recipe for my kitchen. Thanks for the advice!

Use any of your own recipe and Sub Bacon Fat.... Bacon makes it better

One thing to keep in mind when using bacon fat for a vinaigrette, is it's propensity to solidify.

I like my eggs cooked in Bacon fat as well as my  sauteed  potatoes.

Saute garlic in bacon fat, add blanched green beans and heat through. My favorite way to use green beans form the freezer.

We all know its bad for our health but still love the great taste and its ok if you don't overdo this forbidden fruit.2 Tablespoons once a week will not kill you.
