Finally caved and bought one of those "as seen on tv" doohickeys that shreds your fruits and veggies into spirals. In my defense, it was markdown price and has 3 different blades.

Yeah, I tripped upon "zoodles" a few months back while literally looking up the zoo version of alphaghetti I grew up on. Was amazed that the new zoodles were found first in the searches.
Trying to diversify beyond zucchini, so I'm thinking bell pepper, daikon, cucumber, large carrot, turnip, red onion and pear salad maybe dressed with vinegar, soya, sugar, chili oil, and topped with toasted sesame seeds and fresh cilantro?
Mine is PC brand, so either it will be amazing or the handle will break off the first time I use it.(; Either way, it was brought in at the cost of $25.00 but I knew it wasn't going to sell at such a small store, so kept my eye on it until it went down to $4.95.
Okey, dokey. That book looks great. Ideas I would not have thought of. I'm thinking carrot pancakes w raisins in place of potato or sweet potato pancakes. I would kill for a big bowl of pasta w butter & parm-reg. *sigh*
