Hi I need some help on poaching fish in olive oil for a twist on my bourride.

Hey, would you mind being a bit more specific on the issue you're having? If you're just looking for a process on poaching in olive oil, then pop it in the pan, cover it with olive oil, turn the heat on low and probe it every now and again. Was there something more specific you needed to know?
