Not having the space nor expertise for curing at home, I am hoping to source it out but cannot, for the life of me, find online if any butcher or charcutier offers this service. To simplify, this is what I wish to do:

 

- Marinate and make my own sausages, salami, pepperettes, etc.
- Bring finished meat to facility offering curing and preserving services

 

Does anyone out there know of any such service? I live in Toronto, ON but anywhere in southern ON will do. Have meat, will travel.
