Hello! I have always dried my fresh pasta on a rack, but love the way it looks when it's dried in a "nest". My concern is that it won't get proper airflow and will get moldy before it dries. Any thoughts on this? I have been making pasta for awhile and recently took the leap and will start selling at a farmer's market soon. This adds new dimensions to prep and proper storage. I am looking for ideas on the best way to store the dried pasta as well. If anyone has any experience with this, I would love to hear about it! Thanks!
