Hi ChefTalk Community,

 

My name is Michael and I am the General Manager of Mariposa Restaurant at Neiman Marcus in Coral Gables, FL. I have been in the business for 15 years having started in catering and now in restaurants. You may ask why I joined ChefTalk? Well, because I have a passion for professional cooking, eating great food and I am regularly found cooking at work when someone calls out sick. As a matter of fact, I am the acting Chef right now while we are searching for a new Chef to join our team. (unfortunately I am nursing a 3 inch long burn on my forearm from a sheet tray while cooking staff meal)

 

I love to cook fish and anything grilled. I am a lot better at sauteing at work, rather than at home because I like big heat and power.
