I made a terrine of roasted eggplant with a layer of goat cheese in the middle and served with a tomato sauce with a good amount of celery and garlic. The roasted eggplant is mixed with egg yolks, Pecorino, beaten egg white and bread crumbs. The loaf pan is buttered and dusted with bread crumbs then lined with the eggplant slices and filled with the mix. This is really good and has great texture almost like a stuffing.

I did some eggplant slices on the barbecue with olive oil and garlic but I forgot to take pictures.
The other thing I made was some eggplant concoction, consisting of egg plant, chickpeas, bacon and tomato in coconut milk, spiced with lime leaves, fish sauce, chili and basil.
A real fusion sort of dish, but it tasted good (the photograph is not so good though, but hey, I tried)
I have the same one - love it. I wipe it down with cheap vodka and use mineral oil when it's thirsty. Really hard to beat the price on these.
Im absolutely drunk as I write this, but bear with me
1 x Eggplant - peeled as for fruit supremes, cut lengthwise as smallish planks. Should get approximately 5 planks out of an average eggplant.
2 x cloves garlic, smashed on back of knife, hand, can, what have ye
1 x Ramekin olive oil (approximately 3oz)
approx 2oz honey
Fresh Oregano - (approx 10g, including stems), half picked, half not. Picked oregano as garnish.
2x oranges - 1 orange peeled amnd juiced; 1 orage supremed for two or three segments as garnish, then juiced.
S/P to taste.
Lightly oil and salt eggplant planks Put the oiled side down on grill. While eggplant is grilling, salt other side. Flip after grill marks.
Put planks, garlic, orange juice, olive oil, *stemmed oregano, honey, into cryovac bag; seal, and rest for at least two hours.
Remove eggplant plaks from marinade and remove excess liquid; re-fire on grill station, Or saute them. Whatever, get them warm, but not mushy.
When planks are well heated through, and have some char, plate. I'd probably go with some kind of turnip puree, or carrot/orange puree. Or hummus, or maybe tahini-turnip puree. You know hte drill.
Garnish with orange segments, two-finger pinch of picked oregano leaves, Honey drizzle on plate; salt-pepper to taste.

Finally got around to doing something for the challenge.
For an eggplant challenge, one needs eggplant. Let me check the garden...
This looks promising. Eggplant ravioli with ricotta sounds good. We need to make the cheese.
I really didn't need to make this much. And Karen seems to think she now has issues with gluten, so no pasta. Perhaps a cheese basket?
And some sort of sauce, let's go with a basic tomato.
Get the milk and cream on the stove, get it bubbling. Added the acid, lemon juice and some champagne vinegar, let it curdle, col a bit and strain. Yep, ended up with more than I can use for this dish. So the ricotta is in the fridge.
On to the cheese baskets. I need to work on that.
One draped over a glass to shape it. Not my prettiest work.
On to the filling. Eggplant, shallot and some dried porcini mushrooms. Get the shrooms soaking.
Meanwhile dice up the eggplant and some shallot, chop up the porcini.
Get it in the skillet with some olive oil, let it cook a bit. Soften some garlic and herbs in olive oil in another pot. Add some of the mushroom water and let it reduce a bit. Add the canned tomato sauce, some salt, pepper and such.
Add a bunch of the ricotta to the eggplant mix, get it all stirred up and mixed well. Fill a cheese basket, top with the sauce. Some avocado and sweet 110s from the garden along side, and it is a done deal.
Karen really liked it. She didn't think the eggplant would end up being that tasty.
Thanks @Chefross for liking my dish, there were some really good ones recently. And thank you for hosting! These challenges seem to be losing steam but I'm hoping that the autumn bounty approaching they'll pick up again in popularity. The challenges really give me reason to push myself and I've become a better cook because of it.
