vegetarian meal ideas

Hi.

 

so, because I am trying to learn to cook and "survive", I would like to have some links to recipes and suggestions for making a lunch meal or an evening meal for one who is vegetarian.

One thing: I hate mushrooms!

 

I am looking to find what foods I can buy and cook particularly in the USA. I just am spoiled where I live in the UK and need to learn to cook rather than buying most ready meals or making simple pasta dishes and sandwiches.

 

I would appreciate any help or links to recipes that would help me. I am new to cooking so please bare that in mind. There are most days where I just cannot think of what to eat or cook myself and that is the toughest part for me, especially since I am constantly busy and can never make time but I have vowed to make time and learn to cook meals.

I think you posted an very similar question back in April. I remember it because there, too, you seemed to think there was some difficulty finding certain foods in the US. As was pointed out in that thread where you are located in the US makes a difference in what ethnic ingredients are easily available to you but for standard, every day foods, there is no shortage here.

sure, I understand. Maybe I should have made it clearer - I am looking for ideas/suggestions for making lunch/dinner for a vegetarian. Google maybe one option but would rather see what the experienced people here.have :)

You should join a vegetarian specific forum, you will get a lot more info there.

I too remember that thread!  

 

Legumes are your friend.  Nothing is simpler than lentil soup or veggie chili. Stirfry is easy too. Lately I've been obsessed with chinese garlic eggplant stirfry.  I would definitely go in that direction when you google recipes.

 

I'm happy to give you a recipe for something specific.

Click around this site.  On the Homepage the Challenge is Eggplant.  Last month the Challenge was Salad, the month prior (as I recall) was tomatoes. Summer Cooking 2015 is on the Homepage as well.  Click on Forum Navigation in the dropdown box, and take a look at "Recipes" as well.

 

VegetarianTimes is another good source.

I'd still suggest a good vegetarian cookbook. And then sit down and read it. You need to get some idea of the kinds of foods that interest you and find recipes that are within your current skill range. Then you can branch out with recipes that will challenge you, bit by bit, and help you build skills. If you are going to cook meals on an ongoing basis, you also need ideas on how to stock a pantry and kitchen, which most vegetarian cookbooks will walk you through. A few random recipes from people on this forum will not get you very far if what you want to do is eat well all of the time.
