Smoking with a combi-therm oven

Hi , looking for some advice. Im helping open a new kitchen that's going to concentrate on barbecue, we have an alto shaam combi that's a few years old and its going to double as our our oven and smoker. Any thoughts on the best way to go about it ?

Used it one time as a smoker, worked fine, could not fit much in though. Has a pan for chips, set it, and watch it smoke!. Best part is the self cleaning feature, lol.

Put a big pan of ice in there if your cold smoking.
