Dining in Las Vegas

We will be in Vegas later this month and are looking to sample some of the local food.  We are going to try Gordon Ramsey's steak in Paris one night.  Any other places that are "must visit" places in Vegas?  Thanks!

It's been awhile.  Don't know how much help I can be, but until someone comes along... There was an Italian restaurant here that I really liked that closed, called Piero's.  Next time I go back to LV, I would like to go there. Hopefully it's the same owner(s).

Some of the most exciting new places are opening in Chinatown(Chada Street) just a few blocks west of the Strip or downtown(Glutton).
Bouchon @ the Venetian, has amazing breakfast. If you really want to do it up right, Robuchon or Guy Savoy.

Lotus of Siam.  Don't get the pad thai or something.  Go to the Northern Thai section of the menu

Las Vegas has too many good options, both on the strip and off. We go there to eat every year mostly to eat.

Highlights of on the strip dining:
bouchon
B&b ristorante
Db brasserie
Scarpetta
Giada
Mon Ami gabi
GR steak was very good when we ate there

We rarely go off strip, but if downtown: Hugo's cellar

I can't get past how Giada has her name in gold on every plate.

It's worse than that. Cappuccino has a G in the foam too. But the food and service and environment is great.

A couple locals places off the strip are Pasta Mia on Flamingo and Lotus of Siam (mentioned above) on Sahara.  Pasta Mia is very good and fairly reasonable and everything there is excellent.  If you want, the owner will do a multi course italian meal for you and you can negotiate a price for a decent sized group (maybe a small group too)  Lotus of Siam is kinda overpriced but the food is excellent.  Both have very nice wine lists.  Gabi's at the Paris is very good but I haven't been there in a few years.  Smith and Wollenski (south strip) is excellent for steaks and chops.  I love Vegas, but then I can beat a couple of the games :)

I have also been told that the steak house at Circus Circus (yes the dumpy casino on North Strip) is very good and reasonably priced

Andiron Steak & Sea was absolutely awesome! It's in downtown however so you couldnt walk there is if you're staying in the main stretch
