Not that pan needs rescuing I thought to make mention that any chef's special at his shop would most likely be created by him using fresh ingredients.
He is commenting as a customer ......
Although things are changing and this does not happen everywhere the "blackboard" offering will contain a few ingredients needing to be moved before the peak of freshness has been reached.
I never ever eat a seafood special on Monday either.
