Help discovering a sauce !!

Hey guys been to a restaurant this weekend and trying to figure out the recipe of a sauce's that was serviced. If any recopies come to mind please share as it was amazing. Basically it was a brown sauce a bit thick, it was sweat and I could definitely taste rosemary and if I am not mistaken fennel seeds.

I bet it was a fenneled demi-glace.

I'd suspect tarragon over fennel

Yeah I suspected it was a demi-glace still trying to figure out what it had, I forgot to mention it was sweet, the protein it was served with was rack of Lamb
