I'm seeking advice from others on where they currently are at kitchen wages GP. I'm heading up a reasonably busy hotel and restaurant in N.Ireland with about 300 seater function room and 75 restaurant that does good breakfast. Currently running kitchen cost of about 25%. I've been speaking to range of peer and getting feedback of costs everything from 16-32% so just seeking bit of guidance where everyone else currently is at?
