Medicinal Cuisine

Hello all!

 

Does anyone know of any accredited schools that offer degrees or certification in medicinal cuisine? I would really like to find some kind of reliable instruction on using culinary as a healing aide. I've read up on Bastyr and Tulane, but Bastyr had a lot of negative feedback as far as their administrative services go, and Tulane is a medical school, so their certification classes are only open to current medical students. I am looking for a culinary based program that may have a class that branches out into medicinal properties of food and nutrition. Any info is much appreciated.

My wife is a Nutritionist (a regulated profession where we live). I've been exposed to a lot of information on healthy eating and the thing is there is no consensus. For years my "bathroom reading" was the American Journal of Clinical Nutrition, and as a layman (my wife is the professional, I'm just curious) it seems many findings contradict each other. For example, over the past five years my wife shifted towards "Functional Nutrition" (fats are good, dairy is bad, avoid allergens) but this is considered controversial by "calorie counters". Even Paleo, which IMO seems the more healthy approach, has turned into an excuse to toss bacon in every recipe - definitely not healthy if you consider how livestock is treated in USA for example.

 

So my advice to you is "choose the saint you'll pray to" (low fat? functional? paleo? mediterranean? ayurvedic? ...?) and then try to specialize. Because any holistic or one-fits-all "Medicinal Cuisine" will not fly, IMO.

I'm talking more about how some Chinese chefs (if my research is correct) will resort to altering their food compared to going to the doctor for most ailments. Of course there is no "one size fits all" for nutrition, because everyone processes food differently; but I'm looking more of a holistic healing approach to food. Not "cure-all" remedies, but more like knowing your ingredients well enough to be able to adapt to the person you are feeding, and how they feel physically. Finding a class that teaches the ingredients well enough would be a small step in a personal hobby, but I want teachers that know their stuff.

***Edit: I guess along the lines of being able to feed people who are sick, or dealing with specific ailments.
