Hey Chefs.

I moved to africa from the united states about a year ago !! i've been offered a job as a consultant for a sushi/American grill restaurant , however they need me only for the grill.

the client wants me to create a new recipe book and switch weak items with better ones , they will also need me to train their kitchen staff on presentation and executing the recipes for a length period of 3 weeks.

here is where i struggle, i  never did this before and this will be my first consulting job , all my restaurant experience was in the U.S so i really do not know how much i should charge or how to calculate it ....can anyone give me advice on how to proceed on this matter????
