Thanks for the welcome. I am self-taught since 1997 but have studied recently with some chefs, one at Le Cordon Bleu Chicago and one in Burgundy, France. Both said I should seek a stage position in a restaurant to further my education since I can't quit to go full time to culinary school at this time. Hope I can get some insight on this website.
