Baking fail needs a save

Baked 3 loaves of banana nut bread....without the soda.  I now have 3 very dense, moist loaves.  I hate to waste food.  Any suggestions/recipes where I might be able to turn this fail into a save buy creating another dish with them?

Banana pudding (instead of vanilla wafers) or trifle would be good with coconut custard and pineapple compote

Banana Bread French Toast Muffins      Makes 12

 

 

14 cups (roughly) cubed banana bread (about 1/2 inch pieces-ish)

6 large eggs

2 cups whole milk or cream (i use cream as I like it decadent)

2 tsp ground cinnamon

1 TBSP sugar (you can use up to 1 1/2 TBSP but I find it really sweet if you do)

2 TBSP vanilla extract

Maple syrup glaze

 

Preheat oven to 350F and grease muffin tin with butter (or cooking spray but butter is king on this one..hehe)

 

In a large bowl, whisk together eggs, cream, cinnamon, sugar and vanilla extract. Add cubed banana bread and fold in until combined and the bread has absorbed the liquid. (I let it sit for 20 mins to give the bread time to fully absorb the liquid however it is all dependant on the bread you use)

 

Divide the mixture among the muffin tins cups and press lightly down to compact it in each cup.

 

Bake for 25-30 mins until slightly crisp on top and cooked throughout. Allow to cool for 5 mins in the muffin tin before drizzling glaze and scooping each muffin out to serve.

 

Maple Syrup Glaze

 

2 TBSP unsalted butter room temp

1 1/2 cups powdered sugar (more if needed)

1/2 tsp vanilla extract

1/4 cup of good maple syrup (not pancake syrup, REAL maple syrup)

 

Whisk together in a small bowl until smooth and creamy.

 

Add more powdered sugar if too thin.

 

Add more maple syrup or cream 1 tsp at a time if too thick.

 

Drizzle over warm muffins.

.....The morning before you cook, take the slices of bread and allow them to stale the night before.  .....The slices really make for a great pain perdu.  Because of the dryness they absorb more mixture.  

The stale slices will absorb all but the best + 1 tsp of mexican vanilla added to the mixture along with an egg along with some cream or half-and-half.
