I was thinking some kind of stew with tomatillos and poblano chilies but I could easily be persuaded into a better idea.

Mix it with some iceberg lettuce, kewpie mayo, avocado, jalapenos. Eat it on steamed rice. Add some tortilla chips on top if you want.
Make a stew with it, and then with the leftovers again make tamales. :)
