Hi everyone,

 

I'm new to buying and sharpening knives and need some help. I bought the Misono 440 Gyuto Molybdenum as well as the Tojiro DP Gyuto. How do I maintain these knives? I have a Wusthof 4473 10-Inch Sharpening Steel (http://www.amazon.ca/gp/product/B00009WDT8?psc=1&redirect=true&ref_=oh_aui_detailpage_o06_s00), would this work on both of these knives for honing? As for sharpening, I was thinking of just bringing them for a professional to deal with them.
