Hot Holding Stews and Casseroles

Hello

 
 
 
I'm quite new to this site so here we go.
 
I'm looking for ideas for my small cafe. For savoury options we sell soups, stews and sandwiches.
 
Because we are a small, busy outlet it is essential to have easy-to-serve food such as our soups and stews, preferably stuff that can be kept warm without degrading in quality... ​basically looking for good stew and casserole ideas!

Any soup that pushes sides or sandwich sales are good

 

ex.

Tomato bisque and grilled cheese

Chili and cornbread

Seasonal soups are the best!  Like mushroom soup in the fall, english pea and mint puree in the spring, and make sure you have a vegan friendly option!  A great vegan soup that is a big hit at local places is Fasolada, a greek navy bean soup made with beans, carrots, onions, tomatoes, green and red peppers, onions, and olive oil.  Garnish with parsley and dill and it's super hearty and delicious.

 

You may want to have a chicken broth based soup (italian wedding, chicken noodle, chicken corn chowder, minestrone etc), a pureed soup or a vegetarian soup(tomato, carrot, mushroom, whatever), a beef based soup (chili, beef barley) and a vegan option.  

 

For stews I'd do pulled pork.  It can be served in a platter or as a sandwich.

That's a good point - special sandwich fillings to match the soup of the day could increase sales.

Our cafe is located in Glasgow, Scotland so if we were to have seasonal soups on we'd probably need 4 different ones each day! ​:-)

 

We do try to have a vegan soup on often (will have a look at that one you mentioned, thanks) or at the very least one vegetarian option. Then we usually have a meaty dish (beef & barley broth, chicken & chorizo stew etc).

 

I'm particularly looking for inspiration in this department - for example I've recently ditched the chicken breasts in favour of thighs as they hold together whilst being hot held etc. We have done dishes involving a side such as pasta or mashed potato but these cant really be hot held without deteriorating rapidly.
