Oven for small cookie Business

Hi everyone! I started a small cookie business last year in Buffalo, NY. I want to do a large farmer's market this year, but would need a much bigger, faster oven, and also a bigger mixer. Currently I have the 8 quart Kitchen Aid mixer, which works great, but obviously limited in the amount of batter you can make.  I have an LG electric convection oven, but again, it takes me about 30 minutes to cook 36 very large cookies! Any suggestions of a "semi industrial" oven and mixer. I'd like to keep cooking in my house, as I can't afford a shop yet. Do I buy new, used? There are so many used ovens, and I have limited knowledge on what is solid, good bargain, etc. As far as the oven, my large cookies are about 4 to 5 inches.
