I bought one of these just for making osso buco. I found myself using it for a lot more than just that. I make tomato sauce in it, chili, any excuse I have to bust it out, I do. I absolutely...

One of my first internet knives. Great blade. I mean *great* but the handle was a bit weird. Right now it just sits at the bottom of my knife kit.

I've owned one of these for over 3 years now, using it daily. I've never had to sharpen (grind) it, just an occasional run along a fine steel, and it's held a wonderful edge for everyday prep....

There's so many brands, I haven't tried "that" many. But so far I like Dridople the best and beleive it or not karps emulsions....on the dislike side and I'm not a fan of Albert Usters flavorings (at least the ones I've tried so far).
Actually I've never had a apricot compound...I've alway pureed down my own from dried apricots that I've soaked either in hot h2o or a liqueur.

W. Thanks for the reply.
I love Albert Uster's Passion fruit. But,they don't have an Apricot.
My other supplier carries Braun, which they don't have an Apricot. Patisfrance doesn't have one either. I see Siebin has one, but, my supplier doesn't carry that brand.
Yeah, your right I can make my own. Just want a paste/compound for convenience.

Sevarome?
Spoons:If you don't know Sevarome, you might want to give their Apricot paste a try. They are a French company well known for their high-quality flavorings (aromas in French). I know some pastry chefs at high-end hotels in NYC that use a lot of Sevarome products.
In addition to Apricot, they make interesting paste flavors like cardamom, fennel, verbena, and jasmine.
You can purchase them on the web at www.echocolates.com, their importer.

Clay
