Mother's Day!!

My first big Mother's Day - no history of past years but they push through 300-350 covers
Pars? Any suggestions?
Two egg dishes
Crepes
Bacon
Sausage
Carved roast beef
Carved Ham.

Are you asking how much of each dish and protein to prepare?

Will this be a buffet with 2-3 seating times or reservation required table service?

It looks to be a buffet with the carved items. An array of fruit is mandatory, small pastry bites, mini croissants and specialty breads. Made to order waffles with different toppings. Whole Salmon or smoked salmon. Nothing s/b a large serving like slices of pie or cake. Think of people wanting small bites so they could try a lot of different items. Cheese platter, Mini eggs Benedict, Mahi Mahi almandine, Stuffed french toast, bread pudding, Seafood platter, Spinach or Asparagus Quiche, home fried potatoes, Stuffed pork loin, baked apples, peach cobbler. Tamales or Tamale pie may be easier. ......I could go on for hours but you get the hint........Mothers day is a family thing, you need to think about kids being happy at the table. If Moms family is happy, Mom is happy. Fathers day is different, give him a can of beer and a hoagie and were happy..........Good luck.........Chef Bill

As a mother myself I don't like "dainty" Mother's Day meals. Everyday I'm a good girl and I eat my fruit and yogurt and flax seeds and enough salads to make me sprout. Give me a nice hunk of meat that I don't have to cook myself and a decadent dessert please.

Good luck whatever happens! Mother's Day is crazy at restaurants!

A dish I think would pair well with your menu is chilled asparagus on a platter surrounded with sliced tomatoes and (mustard) vinaigrette dressing. You might add some chilled shrimp or crab to the dish. Is it buffet style?

Fruit is a good idea - particularly for the crepes - fresh berries, melon - or melon wrapped in prosciutto.

There's a recent thread about chocolate-covered strawberries where I mentioned chocolate covered Strawberry Roses - red and white would be a nice presentation.

"Momosas" lol - I made up a new name for mimosas - champagne poured over sorbet - flavor of choice - lemon or orange are a few ideas.

Sounds like you have lots of breakfast-y items. Trying to think about creative/interesting ideas for the roast beef - other than small rolls for sandwiches and pasta/potato/mac salads. Hmmm, maybe crostini.

Or, you might pair the ham and roast beef with asparagus or green beans, and a potato au gratin, scalloped or dauphinoise dish. Oui? Maybe someone has a TNT recipe for a large group.
