Would help if you would would share your recipes including the instructions and any deviations you made (if any).
Many times it is not the recipe but a substitution that sends the cake sideways.
Edit to add.... the problem I see most often with carrot cake is either too many add ins or add ins that are too cold or wet.
All of these will certainly cause a failure to rise or will rise but fall while cooling.
