Decorating a Croquembouche

hello everybody!

while I was at chef school we learned how to professionally decorate a traditional Croquembouche, we used some steel molds to create caramel flowers, I bought the molds but never got around to use them, so I completely forgot how to use them. does anybody know how to create this flowers?

Not sure what mold you're asking about. If possible, post a pic. Steel?

  I'm sure I'm older than you. I've only owned sets of Magyfleur because I worked with the Chef who invented them

They're solid bronze and a bit costly. I'm sure you are describing something newer. but took a shot.
