Rotisserie rib of beef

Hello all, please could you help, Tomorrow i plan on cooking a rib of beef on the rotisserie, im really struggling for ideas for sides as i wanted to stay away from a traditional roast, so im looking for summer ideas please. any suggestions would be great and much appreciated.

Well, if you say summer idea's, I would say "a selection of salads", but I don't know if that is helpful.

 

You could do roasted veges as well (like butternut, pumpkin, potatoes, sweet potatoes etc), but that's more wintery.

Stir fried veges

Mashed potatoes

Vegetable pie

Fresh tomatoes with balsemic vinegar and olive oil

Fresh rolls

Cucumber sticks

I think there are endless options!

Thanks for the ideas. the weather turned really bad here so ive decided to save the beef for another day.

If you can get really fresh farm-ripened tomatoes, nothing beats a basic caprese: sliced tomatoes, real mozzarella, basil, extra-virgin olive oil, and a pinch of coarse salt and cracked pepper. Late summer on a plate!

Cream and cheese and corn-stuffed zucchini?

Focus on what's in everyone's gardens and you can't go wrong.

It's a little late but how about a corn flan?  Juice some corn kernals and use them in place of about half of your cream in your flan mixture.  Season with just a hint of rosemary to help tie it with the beef.
