Hello all, please could you help, Tomorrow i plan on cooking a rib of beef on the rotisserie, im really struggling for ideas for sides as i wanted to stay away from a traditional roast, so im looking for summer ideas please. any suggestions would be great and much appreciated.
If you can get really fresh farm-ripened tomatoes, nothing beats a basic caprese: sliced tomatoes, real mozzarella, basil, extra-virgin olive oil, and a pinch of coarse salt and cracked pepper. Late summer on a plate!
It's a little late but how about a corn flan? Juice some corn kernals and use them in place of about half of your cream in your flan mixture. Season with just a hint of rosemary to help tie it with the beef.
