September 2016 Cooking Challenge: Bread

This month's challenge topic is 'bread'. I don't think this has come up before. Any sort of bread you like: flatbread, sourdough, sweet breads, French bread etc. To kick things off, here's a rye bread loaf I made earlier:

Okay, Here we go!

I needed to refresh my sourdough starter and recently I have started using most of the excess.

And now I got a better reason than ever to do so /img/vbsmilies/smilies/thumb.gif

About 100 gr left over sourdough got mixed with 50 ml water, 100 gr flour, olive oil and salt.

Rested it for a good hour or so


Then rolled it out thinly


Pre-heated my cast iron skillet


And cooked the flat bread.

It did puff up somewhat.


Turned it after a couple of minutes


And topped with my left over black eyed pea - tomato - madam Jeanette mixture (yep, the chili's are featuring)

I figured it was all about the flat bread, hence the left over for topping


Rolled it and ready to eat

Looks great and I love the topping! Its very satisfying when flatbreads puff up in the pan.

I keep meaning to make a sourdough starter but haven't ever got round to it. I fear it will be like a pet and I'll neglect it!

Banana bread. I use a recipe with a nice trick that gets banana bread from that meh stuff mom make as a kid to what it always seemed like it could be. The trick is to microwave the bananas, reduce the resulting juice to intensify the flavor, and then mix it back into the smashed banana. Comes out great.
