Cooking Pork Ribs

I have acknvection oven and am cooking Pork back ribs. If I cook them for 7 hours at 180 F, will they be undercooked?? I have them in a deep dish tented with a little apple juice so the convection oven doesn't dry them out.

What's your reason for cooking them for 7 hours at 180? That's just going to make a pork petri dish.

The temp is too low. 225 to 250 is better for low and slow ribs.

You need hotter air as it's a poor conductor of heat.
