Hey all! My S.O. is feeling under the weather and I'd like to make him some healthy comfort food. What's your favorite food to eat when you are feeling down or sick? Wholesome and easy are the goals here!
Grilled cheese, tomato soup hands down favorite. Simple, quick to make. And by grilled cheese it can be more than bread and cheese! Different meats, tomato etc are all fair game!
Home made chicken noodle soup with broad noodles and biggish chunks of everything with saltine crackers on the side. If I am well enough to drive, I go get Vietnamese pho. Pho always makes me feel better even if I'm not sick.
I second the Grilled Cheese and Tomato Soup if feeling under the weather. BTW, is it just my family, but in our house Campbell's Tomato Soup was always served with Grilled Cheese and popcorn. You threw the popcorn into the soup instead of crackers. Man, it was tasty!!!!
Simple grilled cheese, and Campbell's Tomato Soup, use whole milk instead of water (and maybe add in a little half&half) and add in a pinch of garlic powder and a pinch of onion powder, and a very, VERY small pinch dried basil.
Cook on low, stirring constantly until it's just hot enough that steam starts to come off of it. Do not get it too hot or the milk/cream will begin to curdle. If the soup becomes dark red instead of a pale red, you've overcooked it (but you can still eat it, just has a different texture, at least to me)
