Does anyone have a recipe for a crisp chocolate chip cookie that isn't really high in fat content? Perhaps using coconut oil?

In truth, there is no such thing as a low fat chocolate chip cookie. A bag of chocolate chips alone has about 120 grams of fat. A 1/2 cup of coconut oil has about 110 grams of fat, with 90% saturated fat. A 1/2 cup of butter contains about 95 grams of fat, with approx 64% saturated fat.

While coconut oil is higher in saturated fat, it's about 50% lauric acid, which isn't as bad as other saturated fat. But saturated fat is still saturated fat. Marketing has tried to sell consumers on the notion that it's "healthy" saturated fat.

That said, you can create a crispy chocolate chip cookie by altering your recipe. Use all white granulated sugar; use baker's sugar; a 50/50 mix of melted butter and oil; a strong flour; slightly higher oven temperature.

Baker's sugar is finer, thus melts fast when exposed to heat. This will help the cookie spread. Higher temperature causes the fats to melt faster, which will cause more spread. A stronger flour will help control the spread. You need spread for a crisper cookie, but too weak a flour and you'll end up with a wafer thin cookie.
