Hey there, I just wanted to take a second to introduce myself and say how happy I am to have found an established forum to discuss this thing we all love: FOOD!
As my screen name implies, I am in the Air Force and I consider myself a chef. While I don't possess an official accreditation, I have been in food service for ~15 years, and over the past 3, I have been responsible for menu/recipe development, ordering subsistence, finances, employee development/training, direct supervision over kitchen operations, equipment maintenance and upgrades, etc. etc.
I don't list that to brag; many of you handle all of this and more on a daily basis. I mention it because, until recently, I've struggled with answering the question "What do you do for a living?" I've always said "I'm in the Air Force and I cook." I never really felt like I had a legitimate claim to the title "Chef." We use terms like "Dining Facility Manager," and "Shift Leader," and "First Cook" to describe a job that really is deserving of a more distinguished (in my opinion) title. After looking at various job descriptions, and browsing help wanted posts for "Executive Chef," I realized "hey, I do all of that. I could do that job." That's sort of where I'm coming from.
But I digress.
I really am just excited to be a part of this community, and after browsing the forums, I can see that there is a lot of information still to absorb. I sincerely look forward to hearing from you all.
