So I made a marinated some chicken with carrots and other stuff. I felt guilty for throwing away the carrot tops because they looked really nice and I don't like to waste parts of vegetables. The question is what can I do with them? Can I use them like a fresh herb?
Yes, some people find them to be bitter, but a quick blanch and ice bath takes care of this. I like to make them into a pesto and use that to roast the carrots.

That sounds good...Was also thinking about adding them to a lentil soup. Usually only have onions and garlic with that so might even it out if they are a little bitter.
in indian cooking..we cook diced carrots as a veggie dish..then add fenugreek seeds and sauteed carrot tops to balance the sweetness of carrots with bitter notes.
we used radish leaves also to make a leafy dish...sautee them with onions and garlic to remove strong taste...same technique can be used for carrot tops
